Red lentil, carrot and coconut milk soup

Ingredients (makes 4 portions)
250g dry red lentils
200ml coconut milk
4 carrots
1 leek
1 celery stick
1 tbsp sunflower oil
a pinch of ginger and curry powder (so to impart a nice fragrance, but i don’t like mine spicy. if you do, add more)
a pinch of salt

1. wash all your veggies, peel the carrots, dice them and add to a fairly large saucepan
2. wait until the leek will have softened
3. add the red lentils, water, coconut milk and salt
4. bring to a boil and simmer until the lentils and carrots are soft and then blend until smooth
