Vegan Iced Lemon Cake

INGREDIENTS

For the cake
200g flour
200g sugar
120ml sunflower oil
180ml water
the zest and juice of a lemon
2 tbsp cornflour
1 tsp bicarbonate of soda
1 tsp apple cider vinegar
1 tsp vanilla extract
a pinch of salt

For the icing
125g icing sugar
60g vegan margarine
60g vegan shortening
the juice of 1 and 1/2 lemons
1 or 2 tbsp cornflour (if icing is too soft)

DIRECTIONS
1. sift your flour, sugar, bicarbonate of soda, cornflour and salt in a large bowl
2. grate in the zest of your lemon
3. in a separate measuring container, mix water, the juice of the lemon, vanilla extract, oil and vinegar
4. give that a good whisk and then add to the dry mixture
5. lightly grease a cake tin of about 24cm and bake for about 40/45 mins at 180C degrees or until a toothpick comes out clean
6. to make the icing sift the icing sugar, add the margarine and veg shortening
5. then with a spoon, give it a good mix otherwise when you start beating it the sugar will fly everywhere!
6. add the lemon juice and start beating on full blast for a few minutes
7. if you find that your icing is too soft sift in 1 tbsp of cornflour at a time
8. spread icing on the cake and garnish with grated lemon zest
