Moist lemon and poppy seed loaf

This loaf is very flavoursome but subtle, another perfect treat for those tea times we crave so often.. 🙂
Try it out!


For the cake:
175g plain flour
175g caster sugar
150g soya yoghurt
100ml sunflower oil
50g poppy seeds
8 tbsp water
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
4 1/2 tsp egg replacer
2 tsp vanilla extract
2 zests of lemon
1/4 tsp salt

For the syrup:
juice of 2 lemons
100g of sugar

1. sift flour, sugar, baking powder, bicarb. of soda, salt and egg replacer in one large bowl
2. then add your poppy seeds and grate in the zest of two lemons
3. in a measuring jug, combine water, soya yoghurt oil and vanilla extract
4. pour the liquid over the dry ingredients and mix well
5. bake in a greased loaf tin in a pre-heated oven at 180 degrees celcius for about 40 mins or until a toothpick comes out clean of the centre of your loaf
6. once the cake has cooled down, remove it from the tin and place it on a plate
7. for the syrup, juice the two lemons into a small saucepan and add sugar
8. bring to a boil and simmer for a few minutes
9. allow to cool so that the syrup becomes thicker and then pour over cake
