Last class of my macrobiotic course, centred around calm. We had been talking about having a silent meal for a few weeks and finally decided that for our Calm class we would eat in silence. We only managed doing it for soup and main course, after which we started talking again.
We started out with a split pea soup with rye bread croutons
Main course from centre bottom clockwise: brown rice, roasted parsnips, rocket and cucumber salad with silken tofu sauce, leeks simmered in umeboshi broth and a rich tasty seitan stew thickened with kuzu
For dessert we stewed pears with ginger juice and rice syrup and garnished them with almonds
